This was a very easy simple dish to make as I wanted something a little different and bacon and eggs at the weekend. This was the result of looking in the fridge and seeing what we had. The tomatoes were actually out of the salad we had the previous day they are covered in mozzarella.
- 4 Eggs
- Sliced red onion
- Cheese (I used red Leicester and chives)
- Layer all the above ingredients into an oven proof dish
- add four eggs
- add salt and pepper
- place in the oven for 20 minutes
- remove and serve.
You could easily use frozen spinach but I just find it has excess water and I prefer to use fresh produce. This can be made with absolutely anything you have to hand fetta would be delicious in this as would an avocado along with some spices. I chose not to add garlic but this would be a nice addition.
